Tip: Use this menu for any celebration such as: Giants winning the Super Bowl (Eli Manning was former quarterback for the University of Mississippi); Valentine's Party or
Night With the Kids.
Decorate with hearts with everyone's name printed on them, red and blue napkins and a DVD.
Suggestions: replay of the Giants game, romantic movie such as Love is a Many Splendid Thing or Tom Sawyer. Use red and blue candles. Allow the children to help make the dishes.

Recipes

Pigs in the Blanket

Hot dogs or small sausages
cresent rolls

Cut the hot dogs into smaller pieces. Wrap in the rolls. Bake at 350 degrees until done-
about 15-20 minues.


Veggie Relish Plate

Strip and clean veggies such as carrots, celery or other vegetables that children enjoy. Arrange attractively on a plate. Dip in hot cheese sauce.

Cheese Fondu

Melt 2 cups of cheddar cheese with 1/4 c. of evaporated milk in a crock pot. Dip the veggies into the sauce.

Mississippi Mud Cake

2 cups cake flour

2 cups sugar

1/2 t. salt

1 t. soda

1 stick margarine

1/2 cup oil

4 T. cocoa

1 cup water plus 1 T. cold water

2 eggs

1/2 cup buttermilk

1 package of minature marshmellows

Shift flour with sugar, salt and soda. Melt margarine with oil, cocoa and 1 cup water. Allow to boil. Add to flour mixture and mix. Add beaten egss and stir. Add the cold water and buttermilk. Mix well-approximately 25 hand beaten strokes. Pour into a flour-oil sprayed 9x13 inch pan and bake at 375 degrees for 25-30 minutes. Layer marshmellows over hot cake. Pour frosting over top.

Frosting for Mississippi Mud Cake

1 stick butter or margarine

2 T. cocoa

6 T. milk

1 box confectioner's sugar

1 t. vanilla

Combine the butter, cocoa and milk in a saucepan. Bring to a boil. Remove from heat. Add confectioner's sugar and beat with whisk. Add vanilla flavoring. Pour over the top of marshmellows and cake. Allow to cool before serving.

Creek Water Tea

Bring a quart of water to a boil and remove from heat. Add one family size tea bag and steep for three minutes. Do not steep too love because the tea will be bitter. Serve over ice cubes. Cut lemon slices; make a slit about 1/2 way through the middle of the slice and attach to the rim of the glass.

From the Nutritionist: The hot dogs and cheese have protein for bones and teeth. Cheese also has calcium. Lean hot dogs may be made of beef, turkey or chicken. People with high blood pressure should be cuatious of the sodium content. Read labels. The cake and bread provides carbohydrates. The vegetables contain much needed vitamins and minerals. Diabetics should restrict the cake protions to a minimum since the sugar content is very high. Have a great Mississppi Mud Celebration!!!!
