Mother’s Day or My Mentor’s Dessert

Tip: Do something special for Mother this year. If you do not have a mother to honor, find a wonderful mentor. Go on a picnic or have a backyard barbeque. Decorate with fresh spring flowers. Serve this delicious dessert as a special treat!

Food for thought: Honor your father and mother, which is the first
commandment with a promise. Ephesians 6:2



Strawberry Cream Cheese Pie

2 egg whites
¼ t. cream of tartar
1-cup strawberries
½ c confection sugar
8 oz. cream cheese
1 small tub of whipped topping
1 graham flour pastry shell

Soften cream cheese to room temperature. Beat egg whites with cream of tartar until they stand in peaks. Crush strawberries and add to egg whites. Whip a minute longer. Add confection sugar, softened cream cheese and whipped topping. Whip until all mixture is blended. Pour into a baked pastry shell or graham cracker crust and chill for 1 hour. May freeze and thaw slightly when ready to serve. Serves 8.
