Preparation of Home Made Yogurt
1 quart of skim milk
5 tablespoons of powdered milk
1 container of active yeast yogurt
Heat milk to boiling temperature. Milk should cool to room temperature. May test on forearm for coolness. Add the powdered milk and yogurt. Blend in the food processor. Pour into jars and place into a yogurt maker or 110-degree warm water. Maintain constant temperature for 6-8 hours. Do not move or shake the jars. Do not place any lids on the jars, but cover the cooking container. In a water bath, water should come to neck of jar. Place lids on jars. Cool. Keep refrigerated. May use one jar for the next batch starter. This is a calcium and protein food that is tasty as well. If liquid collects on top of yogurt, pour off and use in breads with milk.
