Omelet with greens and bacon

Easter Brunch is a good time to serve this omelet. Mix 6 eggs, 6 slices of cooked, crumbled bacon and a cup of precooked spinach or mustard greens together with a cup of cheese and 1/4 cup of milk or cream. Salt and pepper to taste. Pour into a well oil sprayed skillet and cook on top of stove until bottom is set. Place in a 350 degree oven and finish cooking top. Takes about 3-5 minutes. Cover handle with tin foil to prevent melting. When cooked, cut into slices like a pizza or turn onto serving plate and flip one half over like an omelet. Serve with cheese biscuits and fruit.
